Abstract
The objective of this research is to demonstrate how the use of an analogous model structure designed according to the system dynamics approach can be used to characterize the structure of a production system. The contexts for applying these principles are the maple syrup production, in Quebec, and the Champagne wine production, in France. Results are presented to illustrate the workings of the models and implications for the agrifood sector are discussed.
