Abstract
Noticeable structural change has for a long time been a feature of the food industry and of strategic interest to decision-makers. This paper presents system dynamics (SD) models for hog, maple syrup, and Champagne productions. It discusses how they are well-suited and flexible to examine challenges facing the food system. This paper argues that system dynamics models are useful to inform decision at times of change. These models can effectively rely on recent data and provide a means to rationalize and document the mental models of decision-makers.
